1. What or who do you consider your inspiration ..what gets you up in the day ?

    My inspiration today is I live right now looking for new flavours and new products that I can play with ! 

 

2. What is your current philosophical approach to cuisine ?

    My philosophy about cuisine is how I can bring the best flavours of any kind of products to the table . 

 

3. What is your latest ambition food wise ?

    I love to see the people go to Juvia restaurant for the food as well not only for the view!  

    Hopefully the costumers are going to be able to understand what are changing now on the menu 

 

4. What is your favourite course in the meal dessert? appetiser? main course and please explain why/

    I'm more of a fish and crustaceans person!  Because I think you can make so much more of your soul 

    to the  fish’s than the meat . 

    Chocolate is my favourite dessert better sweet  if its possible 

 

5. What would be your ideal meal spring summer wise ?

    Gazpacho and vegetable dish with a grilled ocean products. 

 

6. What is your earliest food memory?

   The roasted chicken  from my mother !  My wife keep doing the same recipe

   « one of the best chicken ever.«
